Apple Burrito
Ingredients: Small tortilla, slightly warmed cinnamon and brown sugar, whipped cream cheese and apple slices.

Harvest Soup
Ingredients: 1 med onion, 1 cup of each of the following: celery, carrots, turnip, parsnips, chopped tomato, corn, beans. I can of green beans, 1 large can chicken broth, 2 small cans of beef broth.

Directions: Saute onions, carrots, celery, turnip, parsnip for 10 minutes, add broth and simmer until tender. Add tomatoes and other vegetables and 1 cup of pasta (orzo). Salt and pepper to taste.

Glazed Butternut Squash
Ingredients: 3 lbs butternut squash peeled, ½ cup apple cider, ¼ cup water, 2 tbsp butter, 1 tbsp brown sugar, 1 tsp salt, ½ tsp pepper, 1 tbsp chopped, fresh or dried sage. Add ¼ cup chopped pecans (optional).

Directions: Cut squash in half lengthwise; remove and discard seeds. Cut each half into 4 wedges; cut wedges into 2-inch pieces. Stir together squash, 1/2 cup apple cider, and next 5 ingredients in a 12-inch, deep-sided, nonstick skillet over medium-high heat; bring to a boil. Cover, reduce heat, and simmer, gently stirring occasionally, 25 minutes. Uncover and cook 5 minutes or until liquid thickens and squash is tender. Gently stir in pecans and sage until well combined.

Fresh Basil Pesto Recipe
Ingredients: 2 cups fresh basil leaves, packed, ½ cup freshly grated Parmesan or Romano cheese, ½ cup extra virgin olive oil, 1/3 cup pine nuts, 3 medium sized garlic cloves, minced, salt and pepper to taste.

Directions: Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

 

ACTIVITIES

Pumpkin Pie Play Dough
Ingredients: 5 ½ cups flour, 2 cups salt, 8 teaspoons cream of tartar, ¾ cup oil, 1 container pumpkin pie spice (small), orange food coloring, 4 cups water.

Directions: Mix all ingredients together; knead the dough on a floured surface until it is smooth.

Kool-Aid Play Dough
Ingredients: 2 cups warm water, ½ cup salt, 2 tbsp oil, 2 packets of Kool-Aid (any flavor), 3-4 cups flour

Directions: Add flour and mix until you have play dough consistency.

Gak-like Goo
Ingredients: 4 oz. Elmers Glue, 4 oz. water, 1 ½ tsp Borax, 4 oz. hot water, food coloring.

Directions: Mix glue and tap water adding food coloring of choice. Set aside. Add Borax to hot water, mix together. Combine Borax mixture into glue, then mix with hands little by little. Easily halfed or doubled if desired. Don’t worry, it does wash out of clothes!
